If you want to tame animals as a hunter, you have to equip the skill book the man gives you, then, upgrade the skill by pressing B to the quantity of skill points you have. Drag the Tame skill to a number and click the button at the bottom right of the screen, then click the auto/manual attack button. Attack a black wolf with a weapon, switch to your fists and weaken it to about 15-10 HP, then right-click the skill "Tame".
